Jordan’s Fish Fingers and Chips

Far ShotI don’t know about you guys but I love good old fish and chips and so do my kids… I decided I would dig into my own Cod Fish Fingers, Homemade Oven Chips and Chilli Minted Mushy Peas. I’ve tried to make this recipe as healthy as I possibly can without destroying the amazing dish. I hope you enjoy it as much as I did and the family.

You will need;

  • 2x Cod Fillets (I used Tesco’s Frozen Cod Fillets)
  • Breadcrumbs (about two cups)
  • Plain Flour (about two cups)
  • 2 Eggs for egg wash
  • A handful of Dill
  • Sea Salt and Black Pepper
  • Desiree Potatoes
  • 1 tsp Smoked paprika
  • 1 tsp Garlic Powder
  • 1 onion diced
  • 2 garlic cloves
  • 1 chilli (Deseed if you want)
  • A good handful of frozen peas.
  • Handful of mint and/or use mint sauce


  1. Cut your cod fillets into fingers (If you’re using frozen fish defrost them overnight in the fridge).
  2. Add flour, eggs and breadcrumbs into separate bowls
  3. In the breadcrumb bowl add a pinch of salt and pepper plus your dill and stir with your fingers
  4. Coat your fish fingers in the flour, then egg and finally into the breadcrumb mixture.
  5. Once all Fish Fingers are coated put back into fridge to firm up.
  6. While your fish is firming prep the chips. Peel and chop your Desiree potatoes and blanch them.
  7. Add a tray with coconut oil into the oven and preheat at 180 for fan (Gas Mark 4, 350 Fahrenheit).
  8. Once Chips are blanched drain the water and dry with a paper towel then add to a bowl.
  9. Add your Smoked Paprika, Garlic Powder and Sea Salt to your blanched chips and cover well.
  10. Take out your tray from the oven and add your chips and place back into the oven for 22 minutes or until golden.
  11. Now for the Mushy Peas.
  12. Put your onion, Garlic and Peas into a pan and boil
  13. Once there’s 10 minutes left bring a frying pan or griddle pan to a medium high temperature with a small bit of coconut oil in, once hot add your fish fingers into the pan. Cook till well colour and then turn over. Bring your heat down slightly if they start to brown too much.
  14. Once your peas are boiled drain the water and add to a blender, add in your chilli and mint and blitz to your preferred consistency.
  15. Serve with tartar sauce and enjoy… Why not put your fish fingers into a butty and enjoy a fish finger sandwich.
