This Recipe blog I wanted to share with you two recipes well 1 recipe and anther a brunch idea, now I love McDonalds and I’m taking wild guess you might to so I want to share my own McMuffin idea as well as a great tasting Chicken Curry!
So really this is an idea and not a recipe, all you need is some muffins (I used Kingsmill), 1 ration of bacon (I used Unsmoked), 1 sausage (I recommend Tesco Finest Pork and Bramley Apple), 2 eggs (I use organic) and a handful of spinach. Cook sausge and bacon up how you like them then throw some spinach in some melted butter on a medium heat let it cook for a minute or two then add out eggs and scramble.
Put together and boom a quick and easy McMuffic with great flavours!
Chinese Chicken Curry
Ingredients: 2 Chicken breasts Diced, rice of your choice, 1 green pepper, 1 onion, handful of spinach, light soy sauce, butter, plain flour, chicken stock, 1tbsp of Chinese Five Spice, 1tbsp Medium Curry Powder, 1/2 tsp garlic powder, 1/4 tsp turmeric and 1/4 tsp ground ginger.
Method: Cook the chicken in a frying pan on medium heat with oil of your choice, while the chicken is cooking, cut up your onion and Pepper and place in a bowl. Once the chicken is cooked, add just enough of the soy sauce so that it just covers the bottom of the pan, add the onions and the peppers and let it simmer. Next you need to get all of your spices together in to a bowl, and mix with a spoon. Get a small pan and put 3 tbsp of butter and put the heat to medium. While you’re waiting for the butter to melt put the kettle on for the stock. Once the butter is melted add 3 tbsp of flour then mix together with a whisk, it should be quite thick, this makes a roux which is a base for the sauce. Once your kettle has boiled add chicken stock to 450ml of hot water. Start adding the stock and the spices to the pan that the roux is in and whisk it all together, leaving the pan to medium. Add a little bit of the sauce to the chicken and cook for a few minutes then you’re done. I served mine with sweet potato fries as I’m in one of those eating habits where I just want to have sweet potato.
